Summer has officially kicked off and with it comes grilling season. Nothing tastes as good as fresh bbq, and nothing feels better than knowing you have fewer dishes to clean up after a fun family meal. In celebration of Father’s Day and the start of summer, we have decided to share one of our favourite and versatile BBQ meals: KEBOBS.
Healthy Kebobs Done 3 Ways!
The nice thing about Kebobs is that they are versatile and can be altered to please any guest preferences. Here are some helpful tips:
Mix ’n’ Match. Kebobs are best when you make mix and match some that are chicken or beef and then full veggie ones. I usually do double the veggie ones! Then those who don’t eat meat can have the veggie ones — and those who do eat meat can also enjoy a veggie one as a side with the meal.
Keep Meat Separate. By doing this the veggies don’t get burnt (they require less time and heat). Also, it gives your guest options as mentioned above. It’s best to cut the meat and veggies into similar shapes and sizes for even cooking times so that nothing gets burnt. Veggies don’t take as long and require less heat than meat.
Marinade! Marinade! Marinade! I like to set my meat into marinade either the night before or morning of so they are flavourful.
Soak your skewers! If you are using bamboo skewers, then you want to soak them for at least an hour before using them otherwise they might burn on the bbq.
Serve with a Healthy Side Dish. A healthy side dish like lemon rice or quinoa salad are perfect easy outdoor meal. These can be prepared the day before cutting your work in half. We will post recipes on healthy side dishes over the next few weeks. So make sure to check back.
Delicious Kebob Recipe
Today we are going to share our recipe for Chicken and Veggie Kabobs.
Chicken Kabobs
- 1lb of fresh chicken cut into similar shapes and sizes for skewering
- 1/4 cup of olive oil
- 1/4 cup of Newman’s Own Olive Oil & Vinegar Dressing
- Fresh Lemon Juice
After cutting the chicken, place into an airtight container with 1/4 cup of olive oil, 1/4 of the Newman’s dressing (trust us), and some fresh lemon juice. Let it marinate overnight or all day. 20 min before bbq time skewer the chicken and cook.
Veggie Kabobs
- Red & Orange Peppers
- Red Onion
- Mushroom
- Zucchini Circles
- Cherry Tomatoes
- Pineapple (cubed)
- Mango (cubed)
- 1/3 cup of olive oil to drizzle on
- Clubhouse Greek Seasoning
Cut veggies and fruit into evenly sized chunks. You don’t want to cut too thin. Make variations and mix and match. When finished drizzle with olive oil and shake on some Clubhouse Green Seasoning. After cooking the meat kabobs move them to the top rack and then cook the veggie kabobs for 5-10 min. Serve all together with a healthy side dish and watch your guests swoon!
